Historic Barbecue in Georgia
Some people complain that they cannot find “authentic” Southern BBQ. It is sometimes an argument that arises when discussing what authentic actually means. Along with religion and politics, BBQ is one of the three topics that Southerners will never agree upon. In 1954 an article in the Saturday Evening Post quipped, “Get ten people together, and where the Irish would start a fight, Georgians will start a barbecue.” Though lacking in political correctness, the statement accurately portrays Georgians and Southerners’ attitude in general and their determination to claim that their individual way of doing BBQ is the only correct one. This section of the Georgia BBQ Trails is meant to pay homage to the BBQ places in Georgia that have been open for decades. We decided to choose BBQ places that have been open before 1980 or who have a direct lineage to earlier BBQ places or pitmasters as historic. Many of these places have relied on original methods and recipes to serve what they believe is the historic taste of Georgia BBQ.
